Description

A fresh and delicious arugula salad with cherry tomatoes, walnuts, and parmesan, topped with a balsamic glaze.


Ingredients

Scale
  • 6 cups arugula
  • 2 cups cherry tomatoes, quartered
  • 1/2 cup toasted walnuts, chopped
  • 1/4 cup shaved or grated parmesan cheese
  • 23 tbsp extra virgin olive oil or more to taste
  • 23 tbsp balsamic glaze or balsamic vinegar or more to taste
  • 1/2 tsp salt and freshly cracked black pepper, each or more to taste

Instructions

  1. Combine arugula, tomatoes, walnuts and parmesan to a large bowl.
  2. Drizzle olive oil and balsamic glaze/vinegar, salt and pepper. Toss again until well combined.
  3. Taste and season as needed with more salt, pepper, oil and/or vinegar.
  4. Serve immediately and enjoy.

Notes

  • This salad is best served fresh but can be stored for a short time in the refrigerator.
  • Add more ingredients or dressings to customize it to your taste.
