Description

A delicious lemon dessert with a buttery crust and tangy lemon filling.


Ingredients

  • 1/2 cup unsalted butter (room temperature)
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup lemon juice (23 lemons)
  • 1 tbsp lemon zest (finely grated)
  • 3 large eggs (room temperature)
  • 1 1/2 cups granulated sugar
  • 1/2 cup all-purpose flour (sifted)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. In a bowl, combine butter, 1 cup flour, and 1/4 cup powdered sugar until it forms a soft dough.
  3. Press the mixture evenly into the bottom of your prepared baking pan.
  4. Bake for about 20 minutes until lightly golden.
  5. In another bowl, whisk together the eggs, 1 1/2 cups granulated sugar, 1/2 cup lemon juice, 1 tbsp lemon zest, and 1/2 cup sifted flour.
  6. Pour the mixture over the baked crust and spread evenly.
  7. Bake for an additional 25–30 minutes, or until the filling is set.
  8. Allow the bars to cool in the pan for at least 10 minutes and then sprinkle with powdered sugar.

Notes

  • These bars can be stored in the refrigerator for up to a week.
  • For a stronger lemon flavor, add a bit more lemon zest.
