Description

A delightful creamy strawberry tart that is perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • ½ cup unsalted butter, softened
  • ¼ cup confectioners’ sugar
  • a pinch salt
  • 1 egg yolk
  • 2 tablespoons cold water (if needed)
  • 2 cups whole milk (Can substitute with low-fat milk for a lighter option.)
  • ⅓ cup granulated sugar (Can substitute with honey or agave syrup.)
  • 3 egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and halved
  • Optional mint leaves for garnish

Instructions

  1. In a mixing bowl, cream together softened butter and confectioners’ sugar until light and fluffy.
  2. Add the egg yolk and mix until well combined.
  3. Gradually add in the flour and salt, mixing until a soft dough forms.
  4. If the dough is too dry, add a tablespoon of cold water until it comes together.
  5. Press the dough into a tart pan evenly, ensuring it covers the base and sides. Prick the bottom with a fork to prevent bubbling.
  6. Preheat your oven to 350°F (175°C).
  7. Place the tart shell in the preheated oven and bake for about 15-20 minutes or until golden brown.
  8. Allow it to cool completely.
  9. In a saucepan, heat the milk and sugar over medium heat until just starting to steam.
  10. In a separate bowl, whisk together the egg yolks and cornstarch.
  11. Gradually pour the warm milk mixture into the egg yolks while whisking continuously to temper the eggs.
  12. Return the entire mixture to the saucepan and cook over low heat, stirring constantly until the custard thickens (about 5-7 minutes).
  13. Remove from heat, stir in the vanilla extract, and let it cool slightly before pouring it into the cooled tart shell.
  14. Once the custard is set (about 2-3 hours in the fridge), arrange the fresh strawberries on top.
  15. If desired, garnish with mint leaves.
  16. Cut into slices and serve chilled. Enjoy this delightful dessert with family and friends.
