Description
A delicious strawberry charlotte made with ladyfingers and a creamy strawberry filling.
Ingredients

- 2 cups fresh strawberries (hulled and sliced)
- 1 cup heavy cream (chilled)
- 1/2 cup sugar (divided)
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin (powdered)
- 3 tablespoons water (for gelatin)
- 1 package ladyfingers (about 24 pieces)
- 1 cup strawberry puree (for soaking)
Instructions
- In a mixing bowl, combine the sliced strawberries with 1/4 cup of sugar and let sit for 10 minutes.
- In another bowl, whip the heavy cream with the remaining sugar and vanilla extract until soft peaks form.
- Dissolve the gelatin in water and let it sit for 5 minutes, then gently heat until melted. Allow to cool slightly.
- Fold the melted gelatin into the whipped cream, then gently fold in the macerated strawberries.
- Line the sides of a springform pan with ladyfingers, standing them upright.
- Soak the ladyfingers in strawberry puree briefly, then fill the center with the strawberry cream mixture.
- Top with remaining ladyfingers and refrigerate for at least 4 hours or overnight to set.
- Once set, carefully remove the springform pan and serve chilled.
Notes
- Ensure the heavy cream is well chilled before whipping for best results.
- For a more intense strawberry flavor, use homemade strawberry puree.
