Description

A delicious strawberry charlotte made with ladyfingers and a creamy strawberry filling.


Ingredients

Scale
  • 2 cups fresh strawberries (hulled and sliced)
  • 1 cup heavy cream (chilled)
  • 1/2 cup sugar (divided)
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin (powdered)
  • 3 tablespoons water (for gelatin)
  • 1 package ladyfingers (about 24 pieces)
  • 1 cup strawberry puree (for soaking)

Instructions

  1. In a mixing bowl, combine the sliced strawberries with 1/4 cup of sugar and let sit for 10 minutes.
  2. In another bowl, whip the heavy cream with the remaining sugar and vanilla extract until soft peaks form.
  3. Dissolve the gelatin in water and let it sit for 5 minutes, then gently heat until melted. Allow to cool slightly.
  4. Fold the melted gelatin into the whipped cream, then gently fold in the macerated strawberries.
  5. Line the sides of a springform pan with ladyfingers, standing them upright.
  6. Soak the ladyfingers in strawberry puree briefly, then fill the center with the strawberry cream mixture.
  7. Top with remaining ladyfingers and refrigerate for at least 4 hours or overnight to set.
  8. Once set, carefully remove the springform pan and serve chilled.

Notes

  • Ensure the heavy cream is well chilled before whipping for best results.
  • For a more intense strawberry flavor, use homemade strawberry puree.
