Beef and Asparagus Stir Fry

Description

A delicious beef and asparagus stir fry that is quick to prepare and packed with flavor.


Ingredients

Scale
  • 1 lb shaved beef
  • 1 tbsp cornstarch
  • ¼ cup low sodium soy sauce
  • 1 tbsp ginger, grated
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp brown sugar
  • 2 tbsp neutral oil
  • 1 bunch asparagus, trimmed and chopped into 2-inch pieces
  • 2 green onions, sliced and separated into whites and greens
  • 1 tbsp sesame seeds
  • Rice for serving

Instructions

  1. In a bowl, toss the shaved beef with cornstarch and let it sit for 10 minutes.
  2. In a separate bowl, whisk together soy sauce, ginger, garlic, salt, pepper, and brown sugar. Pour half the marinade over the beef and reserve the rest.
  3. Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the marinated steak and cook for 2-3 minutes until browned. Remove the steak from the pan and set aside.
  4. Add the remaining oil to the skillet, followed by the asparagus and the white parts of the green onions. Stir fry for 2-3 minutes until the asparagus is tender but still crisp.
  5. Return the cooked steak to the skillet, pour in the reserved marinade, and stir everything together. Cook for an additional minute, allowing the sauce to thicken slightly.
  6. Remove the skillet from heat and garnish the stir fry with the green parts of the green onions and sesame seeds. Serve immediately over a bed of rice.

Notes

  • Marinating the beef for a short time can enhance the flavor.
  • Feel free to substitute other vegetables based on your preference.
