Ingredients

  • 2 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 teaspoon olive oil
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (any color, chopped)
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste

Instructions

  1. Season the cut chicken with salt, pepper, chili powder, and cumin. Allow it to marinate for about ten minutes while you gather the rest of your ingredients.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté for about 3-4 minutes or until the veggies are soft.
  3. Add the marinated chicken to the skillet. Cook for 6-8 minutes, or until the chicken is golden brown and cooked through.
  4. Once the chicken is done, reduce the heat to low. Pour in the heavy cream and sprinkle the shredded cheese over the top. Stir until well combined and the cheese is melted.
  5. Dish out the chicken mixture onto plates or bowls. Add your favorite toppings like cilantro or jalapeños for an extra zing!
