- 4 pieces boneless chicken thighs or breasts
- 2 cloves garlic, minced
- 1 inch fresh ginger, thinly sliced
- 1 leek or onion, chopped
- 2 carrots, chopped
- 2 stalks celery, chopped
- 4 cups chicken broth
- 1 lemon, juice and zest
- 1/4 cup fresh herbs (parsley, rosemary, thyme), chopped
- 2 tablespoons prepared or fresh horseradish
- 2 tablespoons olive oil

Instructions
- Sauté garlic, ginger, and leeks in olive oil until fragrant.
- Add carrots and celery and cook briefly to soften.
- Add sliced chicken and cook until lightly browned.
- Pour in broth and simmer gently until flavors develop.
- Stir in lemon and horseradish, then season to taste.
- Finish with fresh herbs before serving.
