Description

Ingredients

  • 4 pieces boneless chicken thighs or breasts
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, thinly sliced
  • 1 leek or onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 1 lemon, juice and zest
  • 1/4 cup fresh herbs (parsley, rosemary, thyme), chopped
  • 2 tablespoons prepared or fresh horseradish
  • 2 tablespoons olive oil
  • to taste salt and pepper

Instructions

  1. Sauté garlic, ginger, and leeks in olive oil until fragrant.
  2. Add carrots and celery and cook briefly to soften.
  3. Add sliced chicken and cook until lightly browned.
  4. Pour in broth and simmer gently until flavors develop.
  5. Stir in lemon and horseradish, then season to taste.
  6. Finish with fresh herbs before serving.
