A hearty and spicy beef chili perfect for cold days or gatherings.

- 1 tablespoon olive oil
- 1 pound ground beef (80/20)
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt to taste
- Pepper to taste
- 1 jalapeño, sliced (optional)
- Toppings: chopped scallions, shredded cheddar, sour cream, avocado
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, bell pepper, and garlic. Sauté until softened, about 4-5 minutes.
- Add ground beef, breaking it apart with a spoon, and cook until browned. Drain excess fat.
- Stir in tomato paste, then add diced tomatoes and beef broth. Mix well.
- Add chili powder, cumin, smoked paprika, salt, pepper, and optional jalapeño. Stir to combine.
- Bring chili to a simmer. Reduce heat to low and cook uncovered for 25-30 minutes until thickened.
- Taste and adjust seasoning. Serve hot with your favorite toppings.

- This chili can be made ahead of time and freezes well.
