- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 pound ground beef (80/20 preferred)
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 0 teaspoon black pepper
- 2 tablespoons tomato paste
- 1 can (14 ounces) diced tomatoes
- 1 cup beef broth
- 2 green onions, sliced (for garnish)
Instructions
- Heat olive oil in a large Dutch oven over medium heat.
- Add chopped onions and garlic. Sauté for 3–4 minutes until soft and fragrant.
- Add ground beef and break it up with a spoon. Cook until browned completely.
- Stir in chili powder, cumin, paprika, salt, and pepper.
- Mix in tomato paste, canned tomatoes, and beef broth. Stir well.
- Reduce heat and simmer uncovered for 30–40 minutes, stirring occasionally.
- Once thickened to desired consistency, remove from heat.
- Garnish with green onions before serving.
- Serve hot with keto-friendly toppings like cheese, sour cream, or avocado.
