Ingredients

Scale
  • 2 large sweet potatoes, peeled and cubed into 1-inch pieces
  • 1 lb boneless skinless chicken breast, cooked and shredded
  • 1/2 cup low-sodium barbecue sauce
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn kernels, thawed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a medium bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet and roast for 25 to 30 minutes, or until tender and golden brown.
  4. While potatoes roast, combine the shredded chicken breast and barbecue sauce in a mixing bowl, stirring until the chicken is thoroughly saturated.
  5. Assemble the prep bowls by dividing the roasted sweet potatoes, BBQ chicken, black beans, corn, and red onion into four equal containers.
