- 3–4 boneless, skinless chicken breasts
- 1 package (16 oz) store-bought gnocchi
- 8 oz cream cheese
- 2 cups low-sodium chicken broth
- 1 cup frozen spinach, thawed
- 1/2 cup grated Parmesan cheese
- 2 tsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 packet (1 oz) creamy ranch dressing mix
- Fresh herbs (thyme or parsley) for garnish
Instructions
- Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
- Cook the chicken for about 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add garlic powder, onion powder, and ranch dressing mix to the leftover juices. Stir well to combine.
- Pour in the chicken broth while stirring gently until mixed thoroughly. Add cream cheese, stirring until melted into a silky sauce.
- Add the gnocchi directly into the sauce mixture and simmer gently for about 5-7 minutes until they soak up the flavors.
- Fold in thawed spinach and grated Parmesan cheese, allowing everything to meld together for another minute or two.
- Serve warm and enjoy!
