This creamy chicken gnocchi is a delicious and hearty meal that’s quick to make.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 package (16 oz) store-bought gnocchi
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 1 cup frozen spinach, thawed
  • 1/2 cup grated Parmesan cheese
  • 2 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 packet (1 oz) creamy ranch dressing mix
  • Fresh herbs (thyme or parsley) for garnish

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
  2. Cook the chicken for about 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add garlic powder, onion powder, and ranch dressing mix to the leftover juices. Stir well to combine.
  4. Pour in the chicken broth while stirring gently until mixed thoroughly. Add cream cheese, stirring until melted into a silky sauce.
  5. Add the gnocchi directly into the sauce mixture and simmer gently for about 5-7 minutes until they soak up the flavors.
  6. Fold in thawed spinach and grated Parmesan cheese, allowing everything to meld together for another minute or two.
  7. Serve warm and enjoy!
