Description

This delicious pasta dish features chicken sausage and fresh vegetables, making it a hearty and satisfying meal.


Ingredients

  • 12 oz Pasta (penne or rigatoni)
  • 1 lb Chicken sausage (sliced)
  • 1 cup Bell pepper (diced)
  • 1 cup Zucchini (sliced)
  • 1 cup Cherry tomatoes (halved)
  • 2 cloves Garlic (minced)
  • 1 cup Chicken broth
  • 1 tbsp Olive oil
  • 1 tsp Italian seasoning
  • 1 tsp Salt (to taste)
  • 1/2 tsp Black pepper (to taste)
  • 1/4 cup Parmesan cheese (grated, for serving)

Instructions

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add sliced chicken sausage and cook until browned, about 5-7 minutes.
  3. Add garlic, bell pepper, zucchini, and cherry tomatoes to the skillet. Sauté for another 5 minutes until vegetables are tender.
  4. Pour in chicken broth and Italian seasoning, stirring to combine. Let simmer for 3-4 minutes.
  5. Add the cooked pasta to the skillet, tossing to coat in the sauce. Season with salt and pepper to taste.
  6. Serve hot, topped with grated Parmesan cheese.
