- 2 ripe bananas
- 1 1/2 cups old-fashioned oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the bananas until smooth (about 3/4 cup).
- In another bowl, cream together the butter and brown sugar until light and fluffy.
- Beat in the egg, vanilla extract, and mashed bananas until fully combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the oats and chocolate chips (if using).
- Drop rounded tablespoons of dough onto the baking sheet, spacing 2 inches apart.
- Bake for 10–12 minutes, or until edges are golden and centers are set.
- Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- These cookies can be stored in an airtight container for up to a week.
- Feel free to add nuts or dried fruits for extra flavor.
