Description

Delicious cabbage fritters that are crispy on the outside and soft on the inside.


Ingredients

  • 2 cups cabbage (finely shredded)
  • 2 large eggs (whisked)
  • ½ cup all-purpose flour (or almond flour for gluten-free)
  • 1 bunch green onions (chopped)
  • to taste salt
  • to taste black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked paprika can be used)

Instructions

  1. Begin by finely shredding about 2 cups of fresh cabbage.
  2. In a large bowl, crack open 2 eggs and whisk them until they’re bubbly and well-combined.
  3. Gently fold in the shredded cabbage, ½ cup of flour, and a pinch of salt and pepper into the egg mixture.
  4. Preheat a skillet over medium heat and add a splash of oil to prevent sticking.
  5. Using a spoon or small ladle, drop heaping tablespoons of the batter into the pan, flattening them slightly.
  6. Cook each fritter for about 3-4 minutes on one side until golden brown, then flip and cook for an additional 3 minutes.
  7. Transfer your fritters to a paper towel-lined plate to absorb any excess oil.

Notes

  • For a gluten-free option, use almond flour instead of all-purpose flour.
