- 2 cups finely ground almond flour
- 1 cup freshly grated Parmesan cheese
- 4 large eggs
- 1 tablespoon baking powder
- 1/4 cup olive oil
- 2 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper and lightly grease.
- Whisk almond flour, baking powder, salt, pepper, and Italian seasoning.
- Beat eggs, then mix with olive oil, melted butter, garlic, and parsley.
- Fold Parmesan into dry ingredients.
- Combine wet and dry mixtures gently until thick batter forms.
- Transfer batter to loaf pan and smooth top.
- Bake 35–45 minutes until golden and toothpick comes out clean.
- Cool 20–30 minutes before slicing.
