Description

Ingredients

  • 3 green onions, sliced
  • 1 cup mixed vegetables (e.g., bok choy, mushrooms)
  • 1 tsp sesame oil (for garnish)
  • 1 tbsp toasted sesame seeds (for garnish)
  • Red pepper flakes (optional, to taste)

Instructions

  1. In a large pot over medium heat, combine vegetable broth, grated ginger, minced garlic, and soy sauce. Stir occasionally until simmering.
  2. Add udon noodles and cook according to package instructions until tender but chewy.
  3. During the last five minutes of cooking, add your choice of vegetables.
  4. Adjust seasoning as needed before serving.
  5. Ladle into bowls and garnish with green onions, toasted sesame seeds, a drizzle of sesame oil, and red pepper flakes if desired.
