Ingredients

- 200g fresh or frozen udon noodles
- 4 cups vegetable broth
- 2 tbsp low-sodium soy sauce
- 1 tbsp fresh ginger, grated
- 2 garlic cloves, minced
- 3 green onions, sliced
- 1 cup mixed vegetables (e.g., bok choy, mushrooms)
- 1 tsp sesame oil (for garnish)
- 1 tbsp toasted sesame seeds (for garnish)
- Red pepper flakes (optional, to taste)
Instructions
- In a large pot over medium heat, combine vegetable broth, grated ginger, minced garlic, and soy sauce. Stir occasionally until simmering.
- Add udon noodles and cook according to package instructions until tender but chewy.
- During the last five minutes of cooking, add your choice of vegetables.
- Adjust seasoning as needed before serving.
- Ladle into bowls and garnish with green onions, toasted sesame seeds, a drizzle of sesame oil, and red pepper flakes if desired.

- This soup is customizable with different vegetables based on seasonal availability.
- For a spicier version, increase the amount of red pepper flakes.
