Description
A refreshing and crunchy dessert perfect for any time of day.
Ingredients
Scale
- 6 pieces Weetbix (crushed)
- 1 cup shredded coconut
- 1 cup crushed nuts (like almonds or walnuts)
- 1/2 cup sweetened condensed milk
- 1 piece zest of 1 lemon
- 1 tablespoon juice of 1 lemon
- 1/4 cup honey
Instructions
- Begin by crushing the Weetbix into small chunks and placing them in a large mixing bowl. If you have a food processor, feel free to use it to make the crushing easier and more uniform.
- Mix in the shredded coconut and your choice of crushed nuts into the bowl until combined.
- In a separate bowl, combine the sweetened condensed milk, lemon zest, lemon juice, and honey (or maple syrup). Stir well until all ingredients are thoroughly mixed.
- Pour the wet mixture into the dry mixture and combine thoroughly. The mixture should be moist but firm enough to hold its shape when pressed into a tray.
- Line a square baking dish (approximately 8×8 inches) with parchment paper. Transfer the mixture and press it down evenly into the dish to create a firm base.
- Place the dish in the refrigerator for at least 2 hours or until the slice has set firmly.
- Once set, remove from the fridge and cut into squares. Enjoy your Lemon Weetbix Slice as an afternoon treat or a family dessert!
Notes
- This recipe can be easily made vegan by substituting the sweetened condensed milk with a plant-based alternative and using maple syrup instead of honey.
- For an extra touch, consider adding dried fruits or chocolate chips to the mixture.
