A delicious and refreshing strawberry poke cake, perfect for any occasion.

- 1 box (15 oz) vanilla cake mix
- 1 cup fresh strawberries, chopped
- 1 package (3 oz) strawberry jello
- 1 cup boiling water
- ½ cup cold water
- 1 cup whipped topping
- Optional: Fresh mint leaves or additional strawberries for garnish
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Prepare the cake mix according to the package instructions and pour it into the prepared dish. Bake for 25-30 minutes until golden brown.
- Allow the cake to cool completely; then slice it horizontally into two layers.
- In a bowl, dissolve strawberry jello in boiling water, then stir in cold water and let it cool slightly.
- Place half of the chopped strawberries on the bottom layer of the cooled cake, pour half of the jello mixture over them, and let it set slightly.
- Add the second layer of cake on top and pour remaining jello mixture over it. Refrigerate until fully set (about 4 hours or overnight).
- Before serving, top with whipped topping and garnish as desired.
Notes
- For best results, allow the cake to chill in the refrigerator overnight for optimal flavor and texture.
