- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, chopped
- 1 (14 oz) can diced tomatoes
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot over medium heat, add olive oil and sauté chopped onions until translucent (about 5 minutes).
- Increase heat slightly, add ground turkey; cook until browned and no longer pink.
- Stir in diced carrots and celery; sauté for another 3-4 minutes.
- Add canned tomatoes and chicken broth; bring to a simmer.
- Season with thyme, Italian seasoning, salt, and pepper. Simmer for 20-25 minutes to meld flavors.
- Adjust seasoning if needed before serving hot.
