Ingredients

  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, chopped
  • 1 (14 oz) can diced tomatoes
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil and sauté chopped onions until translucent (about 5 minutes).
  2. Increase heat slightly, add ground turkey; cook until browned and no longer pink.
  3. Stir in diced carrots and celery; sauté for another 3-4 minutes.
  4. Add canned tomatoes and chicken broth; bring to a simmer.
  5. Season with thyme, Italian seasoning, salt, and pepper. Simmer for 20-25 minutes to meld flavors.
