Garlic Butter Eggs with Old Bay Seasoning

Description

Deliciously creamy eggs cooked in a garlic butter sauce with Old Bay seasoning, perfect as a hearty breakfast or a light meal.


Ingredients

  • 4 eggs
  • 1 tablespoon unsalted butter
  • 1 tablespoon garlic, minced
  • 1 ½ teaspoons Old Bay seasoning
  • 1 teaspoon sugar
  • ¼ heaping teaspoon onion powder
  • 1 teaspoon lemon pepper seasoning
  • ¾ teaspoon paprika
  • ½ teaspoon red chili flakes, or to taste
  • 2/3 cup chicken bone or vegetable broth, low sodium
  • 1 tablespoon lemon juice
  • kosher salt, optional
  • parsley, chopped, for garnish

Instructions

  1. Fill a bowl with cold water and ice to create an ice bath, then set it aside.
  2. In a medium saucepan, bring enough water to fully cover the eggs to a rolling boil. Gently lower the eggs into the water and cook for 7 minutes for runny yolks or 7½ minutes for slightly more set yolks.
  3. When the eggs are done, transfer them immediately to the ice bath. Let them sit for about 2 minutes, or until cool enough to handle. Peel under slow running water and pat dry with paper towels. Set aside.
  4. In a large skillet over low heat, melt the butter, making sure the heat is low enough to prevent it from clarifying. Add the minced garlic, stir, and cook for 1 minute.
  5. Stir in all the seasonings and cook for another minute. Pour in the broth, raise the heat to medium-high, and cook for about 6 minutes, until the sauce reduces and slightly thickens.
  6. Add the lemon juice and a splash of water, stirring to combine. Taste and add salt only if needed, since Old Bay and lemon pepper already contain salt.
  7. Place the peeled eggs in a serving bowl, pour the sauce over them, and garnish with chopped parsley. Serve as is, or enjoy with crusty ciabatta bread or jasmine rice.

Notes

  • For best results, use fresh eggs.
  • Adjust the heat while cooking to ensure the butter does not burn.
  • Ensure to taste the sauce before adding salt, as Old Bay seasoning contains salt.
