Description

A refreshing chicken and apple salad with cranberries, celery, and a creamy dressing.


Ingredients

  • 2 cups (300g) cooked chicken breast, chopped
  • 1 large apple (Gala or Granny Smith), cored and diced
  • 1/3 cup (50g) dried cranberries
  • 1/4 cup (25g) celery, diced
  • 1/4 cup (30g) pecans, chopped
  • 1/2 cup (120g) Greek yogurt or mayonnaise
  • 1 tsp (5ml) Dijon mustard
  • 1 tsp (5ml) lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine the chopped cooked chicken, diced apple, dried cranberries, diced celery, and chopped pecans.
  2. In a small bowl, whisk together the Greek yogurt (or mayonnaise), Dijon mustard, fresh lemon juice, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture.
  4. Toss gently until all ingredients are evenly coated in the creamy dressing.
  5. Refrigerate for at least 30 minutes to allow the flavors to meld and deepen.
  6. Serve chilled on croissants, bread, or over a bed of fresh greens.
