Choosing the Right Tomatoes
Tomatoes are arguably the stars of this dish. For maximum flavor, opt for ripe, in-season tomatoes. Their natural sweetness will enhance the overall dish. If tomatoes are out of season, canned San Marzano tomatoes are a fantastic alternative.

Selecting Halloumi
Halloumi, the proud underdog in this bake, should be fresh for the best texture. A good quality halloumi will have a firm consistency that crisps up beautifully in the oven. If you find yourself in a pinch, try a similar cheese, like feta, for a different yet tasty spin.
